Samphire Brasserie and Bar sits on the ground floor of the Cae Mor Hotel on Penrhyn Crescent, overlooking Llandudno Bay and positioned immediately next door to Venue Cymru — making it the natural choice for pre-theatre dining in Llandudno. It is also, by general consensus, considerably better than a hotel restaurant needs to be.

The menu changes every eight weeks to reflect seasonal produce and the best of British fish and meat, and the kitchen's approach has been described as 'brasserie-style food meets fine dining' — dishes that are thoughtfully constructed and well executed without tipping into pretension. Scallops, Welsh lamb, langoustines, mussels and hake all appear regularly, alongside strong meat dishes and a range of vegetarian options that the kitchen takes seriously. One reviewer described a beetroot with white truffle and deep-fried brie as the best dish of their entire holiday.

The restaurant previously held an AA Rosette and the standard of cooking has remained high through kitchen changes. Service is warm and efficient, with staff noted for their attentiveness to dietary requirements — a number of reviewers specifically mention how well their allergies and special needs were accommodated. The setting is comfortable and smartly appointed, and the bar offers a comprehensive range of gins, wines, seasonal cocktails and draught beer.
